How to make Nethili Fish Fry - நெத்திலி மீன் வறுவல்

Nethili (Anchovy) fish is famous dish especially in Tamil Nadu and Kerala. The deep fry is tastier and easy to cook. The time taken for cooking is less than gravy preparation. This dish can be served for meals and also it can be eaten as snack in evening time. People are so fond of this fried fish especially children would like to eat. They really enjoy as it is very crispy. The size of the fishes is varying from 2 inches to 5 inches. The smaller fish gets fried faster and easy to chew.

To cook Nethili fish fry follow these steps:

(1) Clean & wash the fishes thoroughly
(2) Drain water completely
(3) Add Red chilli powder, black pepper, Cumin, Turmeric and Table salt
(4) After mixing masala with fish let it soak for at least 30 - 60 mins
(5) Heat refined sunflower oil in kadai
(6) Fry the fishes in high flame
(7) Drain excess oil
(8) Serve with vegetables salad or mayonnaise

Add ginger and garlic paste if you like. It is not recommended as it sticks with fry pan / kadai and often change the taste of fish. Add less pepper power to reduce spicy, For example if you prepare half a kilogram adding half tea spoon of pepper is enough.

Pour refined oil in to kadai up to half level (For example if the kadai is small pour 250 ml refined sun flower oil) so as to make fishes to float while frying. Do not fry in low flame as it takes more time and won't help to get crispy.
